Peanut butter bars

I made these the other day and they are excellent! Since you can't be here to try them, I thought I would provide the recipe so that you could make your own!
INGREDIENTS

- 1 cup butter or margarine, melted
- 2 cups graham cracker crumbs
- 2 cups confectioners' sugar
- 1 cup peanut butter
- 1 1/2 cups semisweet chocolate chips
- 4 tablespoons peanut butter
- In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan.
- In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

| | Tips: I like to line my pans with parchment paper... it's nice to be able to lift the whole thing from the pan and then cut it into squares without the damn pan being in the way. I don't suggest melting the chocolate in the microwave... it really doesn't take long on the stove, and it's much more fun (and I think you could easily burn the chocolate in the microwave if not careful). |
