What did they call barn owls, before there where any barns?

Just had my first head cheese … no, not a serving of smegma, but the jellied meat product made from the head and tongue of (in this case) cows and pigs. (Sometimes sheep are used, too.)
Worse thing I ever tasted.
I’m not surprised but I’d hoped for better.
This was a major eeewwww.
